Ingredients
  

For the cheesecake filling

  • 8 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup powdered sugar Adjust for sweetness as desired.
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped Whip until it holds soft peaks.
  • 1 cup fresh strawberries, sliced

For the crepes

  • 2 cups all-purpose flour
  • 4 large eggs
  • 1/2 cup milk
  • 2 tbsp melted butter

For serving

  • 1/2 cup golden cookie crumbs For sprinkling on top before serving.

Instructions
 

Prepare the filling

  • In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in the whipped cream.

Make the crepes

  • In another bowl, whisk together the flour, eggs, milk, and melted butter to make the crepe batter.
  • Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to create a thin layer.
  • Cook for 1-2 minutes until set, then flip and cook for another minute.
  • Repeat with the remaining batter.

Assemble the rolls

  • Spread the cheesecake filling onto each crepe.
  • Add fresh strawberries and roll them up.
  • Sprinkle golden cookie crumbs over the top before serving.

Notes

Serve on a nice plate and garnish with additional strawberries or whipped cream. Store leftovers in an airtight container in the fridge for best freshness. For longer storage, keep the crepes and filling separate until ready to serve.
