Ingredients
  

For the tart shells

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened ensure butter is at room temperature
  • 1/3 cup powdered sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 pinch salt

For the vanilla diplomat cream

  • 1 cup whole milk
  • 1 vanilla bean or 1 tsp vanilla paste
  • 3 large egg yolks
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • 3/4 cup heavy whipping cream, whipped

For the topping

  • 1 lb fresh strawberries, sliced use fresh strawberries for best flavor
  • Fresh mint leaves
  • Strawberry glaze or warmed strawberry jam (optional) for a glossy shine
  • Edible gold flakes (optional)

Instructions
 

Preparation of Tart Shells

  • Preheat your oven to 350°F (175°C). Grease tartlet molds or mini tart pans.
  • Cream the butter and powdered sugar together until smooth and fluffy.
  • Mix in the egg yolk and vanilla extract, then fold in the flour and salt until a soft dough forms.
  • Wrap the dough and chill for 30 minutes for easier handling.
  • Roll out the dough and press it into tartlet molds. Prick the bottoms lightly with a fork.
  • Bake for 15-18 minutes or until golden brown and crisp. Let the tart shells cool completely.

Preparation of Vanilla Diplomat Cream

  • Heat the milk and vanilla in a saucepan until warm and fragrant.
  • In another bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
  • Slowly pour the warm milk into the egg mixture while whisking constantly.
  • Return everything to the saucepan and cook until thick and creamy.
  • Remove from heat, stir in the butter, and cool completely.
  • Gently fold the whipped cream into the cooled pastry cream until light and airy.

Assembly

  • Pipe the vanilla diplomat cream generously into each tart shell.
  • Arrange fresh strawberry slices beautifully on top for an elegant look.
  • Brush with strawberry glaze or warmed strawberry jam for a glossy shine.
  • Finish by garnishing with fresh mint leaves and optional edible gold flakes.
  • Serve chilled for the best flavor and texture.

Notes

Store leftover tartlets in an airtight container in the refrigerator. Add strawberries and glaze just before serving to avoid softening the tart shells.
