Ingredients
  

For the crust

  • 1.5 cups sugar cookie crumbs
  • 0.5 cups unsalted butter, melted

For the filling

  • 2 packages cream cheese, softened 8 oz each
  • 1 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sugar cookie dough, cut into small balls

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix together sugar cookie crumbs and melted butter until combined. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  • Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Fold in the sugar cookie dough balls.

Baking

  • Pour the cheesecake mixture over the crust in the springform pan.
  • Bake for 45-50 minutes or until the center is set.
  • Remove from oven and let cool before refrigerating for at least 4 hours.

  • Serve chilled and enjoy your sweet cheesecake!

Notes

Use room-temperature cream cheese for a smooth batter. Press the crust evenly so the base is firm. Chill at least 4 hours, preferably overnight, for the best texture.
