  • 1/2 cup Sweet chili sauce Can be store-bought or homemade.
  • 1 tbsp Soy sauce Regular or reduced sodium.
  • 2 cloves Garlic Fresh is preferable, but jarred is acceptable.
  • 1 tbsp Cornstarch For crispy texture; can substitute with flour.
  • 2 tbsp Oil Choose any oil except coconut.

Preparation

  • Cut the chicken into similar sized pieces for even cooking.
  • Toss the chicken pieces in cornstarch until well coated.
  • Heat oil in a pan over medium-high heat.
  • Add chicken to the pan, ensuring not to overcrowd it, and cook until crispy and cooked through.

Cooking

  • Once the chicken is cooked, add garlic and stir-fry briefly before adding sweet chili sauce and soy sauce.
  • Continue cooking until the sauce is thick and adheres to the chicken.

Notes

For best results, marinate chicken in sweet chili sauce for a few hours or overnight. Leftovers are perfect for lunchboxes or wraps.
