Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix together the mashed sweet potatoes, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before slicing and serving.

Notes
