Main Ingredients

  • 1 pound ground turkey or beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup vegetable broth
  • 1 medium bell pepper, diced
  • 1 medium onion, chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a skillet, cook the ground turkey or beef until fully cooked. Drain excess fat.

Cooking

  • In the slow cooker, add the browned meat, black beans, kidney beans, corn, diced tomatoes, taco seasoning, vegetable broth, bell pepper, and onion.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Before serving, taste and adjust seasoning with salt and pepper as needed.

Notes

Serve with tortilla chips, shredded cheese, sour cream, chopped avocado, or mild salsa. Kids can build their own bowls with fun toppings!
