Fresh Peaches

  • 4 cups fresh peaches, peeled and sliced Choose ripe, fresh peaches for the best flavor.
  • 1/2 cup granulated sugar For mixing with peaches.

Batter Ingredients

  • 1 cup granulated sugar Remaining sugar for the batter.
  • 1 cup all-purpose flour Substitute with gluten-free flour for gluten-free option.
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the sliced peaches with 1/2 cup of sugar and set aside.
  • In another bowl, mix the flour, remaining sugar, baking powder, and salt.
  • Pour in the milk and melted butter, and mix until just combined.
  • Spread the batter into a greased baking dish.
  • Pour the peach mixture over the batter (do not stir).

Baking

  • Bake in the preheated oven for about 40-45 minutes or until the top is golden brown and the pudding is set.

Notes

Serve warm; optionally add ice cream or whipped cream on top. To store leftovers, let it cool completely, then cover and refrigerate for up to three days. Reheat individual servings in the microwave.
