  • 2-3 lb beef roast Choose a cut suitable for slow cooking.
  • 1 packet brown gravy mix Adjust based on preferred gravy amount.
  • 2 cups beef broth Use low-sodium broth for a healthier option.
  • 4-6 pieces potatoes, peeled and cubed Regular potatoes or sweet potatoes can be used.
  • 1/2 cup milk Can reduce for a lighter mash.
  • 4 tablespoons butter Adjust to taste.
  • Salt and pepper To taste.

Preparation

  • Place the beef roast in the slow cooker.
  • In a bowl, combine the brown gravy mix and beef broth, then pour it over the roast.

Cooking

  • Cover and cook on low for 8 hours or until the beef is tender.
  • About 30 minutes before serving, boil the cubed potatoes in salted water until fork-tender.
  • Drain the potatoes and mash them together with milk, butter, salt, and pepper.
  • Once the beef is done, shred it with two forks and serve it over the mashed potatoes with gravy on top.

Notes

For extra flavor, sear the beef roast in a skillet before placing it in the slow cooker. You can add minced garlic for added flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days.
