Ingredients
  

For the Crust

  • 2 cups Oreo crumbs
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp cocoa powder
  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup white chocolate chips, melted
  • 1/2 cup milk chocolate chips, melted

  • Chocolate shavings
  • Fresh berries

Preparation

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Prepare the crust: Mix the Oreo crumbs with the melted butter in a bowl. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then let it cool completely.

Cheesecake Filling

  • In a large bowl, beat the cream cheese until smooth and creamy.
  • Add the sugar and mix well. Beat in the sour cream and vanilla extract.
  • Add the eggs one at a time, beating well after each addition.
  • Divide the batter into three equal parts.
  • Mix the melted semi-sweet chocolate into the first part.
  • Mix the melted white chocolate into the second part.
  • Mix the melted milk chocolate into the third part.

Assembling and Baking

  • Pour the three batters alternately into the crust, creating beautiful layers.
  • Bake for 60–70 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.

Chilling and Decorating

  • Refrigerate the cheesecake for at least 4 hours or overnight until fully set.
  • Before serving, decorate with whipped cream, chocolate shavings, and fresh berries.

Notes

For perfect results, make sure all ingredients are at room temperature. Do not overmix after adding the eggs to avoid cracks. Let the cheesecake cool slowly in the oven to prevent sinking or cracking. For clean slices, use a sharp knife dipped in hot water and wipe it between cuts.
