For the Semi-Sweet Ganache

  • 0.5 cups Heavy Cream Creates the ganache base.
  • 1 cup Semi-Sweet Chocolate Chips Used to create the ganache.

Instructions
 

Preparation of the Crust

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • Wrap the outside of the pan in aluminum foil.
  • Mix the chocolate cookie crumbs, sugar, and melted butter until combined.
  • Press the mixture firmly into the bottom of the pan.
  • Bake for 10 minutes to set.

Crafting the Velvet Batter

  • Beat the softened cream cheese with sugar until smooth.
  • Mix in sour cream and vanilla extract.
  • Add eggs one at a time on low speed to prevent over-mixing.
  • Gently fold in the melted chocolates.

Baking the Cake

  • Pour the chocolate filling over the par-baked crust.
  • Bake for 55-65 minutes until the edges are set.
  • Turn off the oven and crack the door, allowing the cheesecake to cool for 1 hour.

Finishing Touches and Ganache

  • Refrigerate the cheesecake for at least 4 hours, preferably overnight.
  • Heat heavy cream until it simmers, then remove from heat.
  • Add semi-sweet chocolate chips and stir until smooth.
  • Pour the ganache over the chilled cake for a glossy finish.

Notes

For a perfect slice, use a long, thin knife dipped in hot water for cutting.
