  • 2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract

Whipped Cream Frosting

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract

Toppings and Glaze

  • 1/2 cup apricot preserves
  • 2 tbsp water
  • 1 cup fresh kiwi slices
  • 1 cup mango chunks
  • 1 cup peach slices
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup toasted coconut flakes
  • 1 cup extra whipped cream swirls

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add softened butter, eggs, milk, and vanilla extract. Beat until the mixture is smooth and fluffy.
  • Divide the batter evenly between the prepared pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cakes completely before assembling.

Assembly

  • For the whipped cream frosting, beat the cream cheese until smooth.
  • Add powdered sugar and vanilla extract. Slowly fold in the whipped heavy cream until light and airy.
  • Frost between cake layers and around the outside of the cake with a smooth bakery-style finish.
  • Press toasted coconut flakes around the bottom edge of the cake for added crunch and tropical flavor.
  • Arrange kiwi slices around the sides of the cake in an overlapping pattern.
  • Decorate the top generously with mango chunks, peach slices, blueberries, raspberries, and additional kiwi for a colorful fruit-packed finish.
  • Heat the apricot preserves with water until smooth, then lightly brush over the fruit for a glossy bakery-style shine.
  • Pipe whipped cream swirls around the base and chill the cake for at least 30 minutes before slicing.

Notes

Ensure your butter and eggs are at room temperature before mixing for better texture. Use fresh fruits for the best flavor and appearance. If preferred, a chocolate version of this cake can be made by adding cocoa powder and adapting fruits according to availability.
