Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 1 cup sugar
  • 3 packages (8 oz) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup chocolate chips, melted
  • 1/2 cup caramel sauce
  • 1 cup chopped pecans

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs and melted butter.
  • Press the mixture into the bottom of a springform pan to form the crust.

Making the filling

  • In a mixing bowl, beat cream cheese and sugar until smooth.
  • Add vanilla extract and mix well.
  • Incorporate eggs one at a time, mixing after each addition.
  • Blend in sour cream until fully combined.
  • Divide the batter in half. Mix one half with melted chocolate chips.
  • Pour the chocolate batter over the crust, followed by the plain batter.

Baking

  • Bake for 55-60 minutes until the center is set.
  • Remove from the oven and let cool.

Serving

  • Drizzle caramel sauce and sprinkle pecans on top before serving.
  • Serve turtle cheesecake chilled. Slice it into pieces and enjoy!

Notes

Make sure your cream cheese is at room temperature for a smooth batter. Use a springform pan for easy removal of the cheesecake. Let the cheesecake cool completely before adding the toppings to prevent melting. You can add a layer of chocolate ganache for extra chocolate flavor or use walnuts instead of pecans for a different crunch.
