Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Mix until smooth.
  • Slowly stir in the hot coffee until the batter is glossy and thin.
  • Divide the batter evenly between the prepared pans.

Baking

  • Bake the cakes for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
  • Let the chocolate cake layers cool completely before frosting.

Frosting and Assembly

  • For the buttercream, beat the softened butter until fluffy.
  • Gradually add the powdered sugar and cocoa powder.
  • Mix in the heavy cream, vanilla, and salt until thick, smooth, and fluffy.
  • Layer and frost the cooled cake generously, smoothing the sides with an offset spatula.

Ganache

  • Heat the heavy cream for the ganache until steaming, then pour it over the chocolate chips.
  • Let sit for 2 minutes and stir until the mixture is glossy.
  • Drizzle the ganache around the edges for a dramatic chocolate drip effect.

Serving

  • Top the cake with frosting swirls, chocolate chunks, and curls.
  • Serve slightly chilled or at room temperature for the fudgiest, richest bite.

For best results, ensure all ingredients are at room temperature. Using hot coffee enhances the chocolate flavor. Consider incorporating chocolate chips for extra texture.
