Phase 1: Preparation and Dry Mix

  • Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • In a large bowl, whisk the flour, sugar, cocoa, baking powder, baking soda, and salt until uniform.

Phase 2: Building the Emulsion

  • Add the milk, vegetable oil, eggs, and vanilla to the dry mixture. Beat on medium speed for about 2 minutes until glossy and smooth.
  • Gently stir in the boiling water using a hand whisk or spatula to avoid splashing. The batter will be thin.

Phase 3: The Bake and Cool

  • Divide the batter evenly between the prepared pans. Bake for 30–35 minutes.
  • Perform the toothpick test: insert a toothpick into the center; it should come out clean or with a few moist crumbs.
  • Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Phase 4: The Bakery-Style Frosting

  • Beat the softened butter until light and almost white.
  • Sift and mix in the powdered sugar, cocoa, heavy cream, and vanilla. Whip on high for 1 minute until mousse-like in consistency.

Notes

Ensure to line the bottom of your cake pans to prevent sticking. For cupcakes, this batter makes about 24, baking for 18–22 minutes. If frosting is too runny, add more powdered sugar or chill before whipping.
