Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon vanilla extract

For Frying

  • as needed Oil for frying Use oil with a high smoke point such as canola, vegetable, or peanut oil.
  • as needed Powdered sugar for dusting

Preparation

  • In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, milk, and vanilla extract together.
  • Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
  • Roll out the dough on a floured surface to about 1/2 inch thick and cut it into squares.

Cooking

  • Heat oil in a deep pot to 350°F (175°C).
  • Fry the beignets in batches until they are golden brown on both sides, about 2-3 minutes.
  • Remove from the oil and drain on paper towels.
  • Dust with powdered sugar and serve warm.

Notes

To store leftovers, place in an airtight container at room temperature for up to 2 days. You can also refrigerate for longer storage; however, they are best enjoyed fresh out of the fryer. Experiment with flavored sugars or fillings for a different twist.
