Ingredients
  

For the Mousse

  • 350 grams silken tofu
  • 3-4 tbsp smooth peanut butter (to taste)
  • 3-4 tbsp agave syrup (can substitute with maple syrup or powdered sugar)
  • 1 tsp vanilla paste or extract
  • 1 pinch salt

For the Chocolate Ganache

  • 100 grams 70% dark chocolate (chips or broken pieces)
  • 400 grams full-fat coconut milk (tin)

Instructions
 

Prepare the Mousse

  • Add the silken tofu, peanut butter, agave syrup, vanilla extract, and pinch of salt to a blender. Blend until smooth and adjust sweetness if needed.
  • Spoon the creamy mixture into ramekins or jars. Cover them and place in the fridge.

Make the Ganache

  • Melt the dark chocolate using a microwave or double boiler. Mix in the creamy part of the coconut milk until combined.
  • Pour the chocolate ganache over the set mousse and let them set in the fridge for at least 1 hour.

Serve

  • Serve the mousse chilled, topped with chocolate ganache, and garnish with fruits or nuts if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for longer storage (note that texture may change). Use high-quality dark chocolate for the best flavor. Adjust sweetness to taste before setting in the fridge.
