  • 1 pound ground beef
  • 8 ounces egg noodles
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces diced tomatoes with green chilies (optional) for added flavor
  • 1 cup milk
  • 8 ounces Velveeta cheese, cubed
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • Cook egg noodles according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and cook until softened and fragrant.
  • Add ground beef to the skillet. Cook until browned, breaking it into crumbles. Drain any excess grease.
  • Stir in the diced tomatoes (if using), milk, Worcestershire sauce, paprika, salt, and pepper. Simmer for 2–3 minutes.
  • Add the Velveeta cubes and stir until completely melted and smooth.
  • Fold in the cooked noodles until every strand is coated in the creamy cheese sauce. Cook an additional 2–3 minutes.
  • Enjoy warm, topped with fresh chopped parsley if desired.

Notes

Add frozen peas, corn, or mixed vegetables for extra nutrients. Spice it up with crushed red pepper flakes or cayenne. Substitute ground turkey or chicken for a lighter option. Use shell pasta, rotini, or bowties instead of egg noodles. Add beef broth instead of milk for a deeper flavor (but less creamy).
