  • 1 piece pre-made tart shell

Mousse Ingredients

  • 8 oz white chocolate, chopped
  • 1 cup heavy cream
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions
 

Preparation

  • Melt the white chocolate in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly.
  • In a bowl, whip the heavy cream to stiff peaks and set aside.
  • In another bowl, beat the egg yolks with the sugar and vanilla until creamy. Stir in the melted chocolate.
  • Gently fold in the whipped cream until well combined.
  • In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Fold into the chocolate mixture gently.

Assembly

  • Pour the mousse into the tart shell and smooth the top with a spatula.
  • Chill in the refrigerator for at least 4 hours or until set.

Serving

  • Serve chilled, optionally topped with fresh berries or additional whipped cream.

Notes

Be patient when melting the white chocolate; stir gently to avoid burning. Ensure bowls and utensils are clean and dry when beating egg whites. Fold gently to keep the mixture light and airy. Chill the tart fully for best texture.
