  • 1 cup unsalted butter, softened Use room temperature for best results.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs Room temperature for even mixing.
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the semi-sweet and white chocolate chips and the crushed peppermint candies.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 9–12 minutes, or until edges are lightly golden and centers look set but still soft.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For thicker, chewier cookies, chill the dough for 30 minutes before baking. Use extra chocolate chips or peppermint on top for a decorative touch.
