Ingredients

Crust

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tbsp granulated sugar

Cheesecake Filling

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup heavy cream

Mousse Layers

  • 1 1/2 cups white chocolate chips, melted
  • 1 cup semi-sweet chocolate chips, melted
  • 1 1/2 cups whipped topping
  • 1/2 cup white chocolate, melted
  • 1/2 cup milk chocolate, melted

Instructions

Preparation

  • Preheat your oven to 325°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a bowl, mix chocolate cookie crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan.
  • Bake the crust for 8 minutes, then let cool slightly.

Cheesecake Baking

  • In a large bowl, beat cream cheese until smooth and creamy.
  • Add sugar and mix until fluffy. Add eggs one at a time, mixing gently after each addition.
  • Stir in vanilla, sour cream, and heavy cream until silky smooth.
  • Pour the cheesecake filling over the crust and bake for 55-65 minutes, until the edges are set and the center slightly jiggles.
  • Turn off the oven and leave the cheesecake inside with the door cracked for 1 hour.
  • Chill completely for at least 6 hours.

Mousse Preparation

  • Divide the whipped topping into two bowls.
  • Fold melted white chocolate into one bowl and melted semi-sweet chocolate into the other to create two mousse mixtures.

Assembly

  • Spread the white chocolate mousse over the chilled cheesecake first, then smooth the chocolate mousse layer on top.
  • For the zebra pattern, pipe circles of melted white and milk chocolate alternately over the top.
  • Drag a toothpick from the center outward to create the spiderweb swirl design.
  • Chill the Zebra Chocolate Mousse Cheesecake for another hour before slicing.

Serving

  • Slice the cheesecake into wedges and serve cold.
  • You can add a dollop of whipped cream or some fresh berries for an extra touch.

Notes

Ensure all the cream cheese is softened before mixing for a smooth texture. Using flavored whipped creams or adding fruit puree can create unique twists.
