Ingredients
- 4 boneless skinless chicken breasts
- 4 tbsp unsalted butter
- 4 cloves garlic minced
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 cups broccoli florets
- 2 cups zucchini sliced
- 1 cup bell peppers chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
Instructions
1 Prepare the Chicken
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- Cook the chicken for about 5-6 minutes on each side, or until golden brown and cooked through. Set aside.
2 Make the Garlic Butter Sauce
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and cook for 1 minute, until fragrant.
- Return the chicken to the skillet and spoon the garlic butter sauce over it. Let it cook for another 2-3 minutes to absorb the flavors.
3 Roast the Veggies
- Preheat the oven to 400°F (200°C).
- Toss the broccoli, zucchini, and bell peppers in olive oil, garlic powder, salt, and pepper.
- Spread the veggies on a baking sheet in an even layer.
- Roast for 15-20 minutes, or until the veggies are tender and slightly crispy.
4 Serve
- Plate the garlic butter chicken alongside the roasted veggies.
- Drizzle any remaining garlic butter sauce from the skillet over the veggies for extra flavor.
