Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cups broccoli florets
  • 2 cups zucchini sliced
  • 1 cup bell peppers chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions
 

1 Prepare the Chicken

  • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
  • Cook the chicken for about 5-6 minutes on each side, or until golden brown and cooked through. Set aside.

2 Make the Garlic Butter Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for 1 minute, until fragrant.
  • Return the chicken to the skillet and spoon the garlic butter sauce over it. Let it cook for another 2-3 minutes to absorb the flavors.

3 Roast the Veggies

  • Preheat the oven to 400°F (200°C).
  • Toss the broccoli, zucchini, and bell peppers in olive oil, garlic powder, salt, and pepper.
  • Spread the veggies on a baking sheet in an even layer.
  • Roast for 15-20 minutes, or until the veggies are tender and slightly crispy.

4 Serve

  • Plate the garlic butter chicken alongside the roasted veggies.
  • Drizzle any remaining garlic butter sauce from the skillet over the veggies for extra flavor.
