  • 12 oz fettuccine pasta
  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese Use freshly grated for best results.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • Cook the fettuccine pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken breasts, seasoning with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  • In the same skillet, add minced garlic and sauté for about 1 minute.

Cooking

  • Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until smooth and thickened.
  • Add cooked pasta to the skillet and toss to combine with the sauce.
  • Add sliced chicken on top and garnish with parsley. Serve warm.

Notes

Serve alongside a green salad and crusty bread for a complete meal. Pairs well with white wine. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently.
