  • 1 lb ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup uncooked egg noodles
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 1 cup shredded cheese (optional) to sprinkle on top

Preparation

  • In a skillet, brown the ground beef or turkey with the chopped onion and minced garlic. Drain any excess fat.
  • In a slow cooker, combine the browned meat mixture with corn, green beans, diced tomatoes, uncooked egg noodles, salt, pepper, and Italian seasoning.
  • Mix well and cook on low for 6-8 hours or until the noodles are tender.
  • If desired, sprinkle shredded cheese on top and let it melt before serving.

Notes

Serve this casserole hot with a simple green salad or crusty bread. For longer storage, refrigerate leftovers for up to 3-4 days, or freeze for up to 2-3 months. Thaw overnight in the fridge before reheating. Feel free to adapt vegetables and spices to your taste.
