  • 2 lbs beef stew meat, cut into chunks
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 4 cups beef broth
  • 1 cup red wine (optional) Adds richness to the stew.
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 pieces bay leaves
  • to taste Salt and pepper

  • In a large pot, heat olive oil over medium heat. Add beef chunks and brown on all sides.
  • Remove the beef and set aside. In the same pot, add onion and garlic, and sauté until translucent.
  • Return the beef to the pot; add carrots, potatoes, beef broth, red wine, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until the beef is tender.
  • Remove bay leaves before serving. Enjoy your hearty stew!

Notes

For extra flavor, brown the beef in batches instead of all at once. You can add other vegetables like peas or green beans for more variety. If you like a thicker stew, let it cook uncovered for the last 30 minutes to reduce the liquid.
